Split Pea Soup 7

Ingredients:


1 pound dried split peas -- 2 1/3 cups

3 quarts water -- 12 cups

1 3/4 pounds ham hocks or bone -- up to 2

1 large onion -- minced

1 cup diced carrot

1 cup diced celery

1 piece bay leaf

1 tablespoon lemon juice

2 teaspoons salt

1/8 teaspoon pepper
 

Preparation / Directions:


Rinse and sort peas. In large soup kettle combine peas, water, and ham; simmer, covered 2 - 2 1/2 hours. Add remaining ingredients; simmer, covered 45 minutes. Remove bones. For thicker soup simmer 20-30 minutes more uncovered.
