Spanish Garlic Soup

Ingredients:


12 Cloves garlic peeled and chopped

1 Teaspoon salt

1 Teaspoon white pepper

1/4 Teaspoon oregano -- thyme and basil

1 piece bay leaf

5 Cups water

2 Tablespoons oil

2 Slices whole grain bread

1 Cup grated parmesan cheese to taste
 

Preparation / Directions:


Combine garlic, seasonings, water and oil and bring to a boil. Cover and simmer for 30 minutes. Crumble bread into the soup and return to a boil. Serve with grated cheese. Makes 4 servings. This light first course soup was top honors for flavor and health-giving properties. You can also use it as a stock to make other dishes such as rice, beans or pasta.
