LINDA MCCARTNEY'S AVOCADO AND GREEN CHILI SOUP

Ingredients:


2 medium avocados ripe

3 cup Soy milk

4 Ounces Canned green chilies

1 medium Onion -- chopped

1 teaspoon salt and pepper -- to taste

2 Tablespoons Lemon juice

2 Tablespoons Dry sherry

---FOR GARNISH---

2 tablespoons Chopped chilies -OR- Fresh parsley
 

Preparation / Directions:


Cut the avocados in half and remove the pits. Scoop out the avocado pulp and puree in a blender. Add the remaining ingredients except garnish to the blender and puree until evenly smooth. Pour the mixture into a serving bowl, garnish, nad serve immediately. Preparation time: 10 minutes
