Ingredients:


8 medium potatoes

6 medium leeks

1 cup olive oil

2 liters water

1 teaspoon salt

1 teaspoon nutmeg

1 tablespoons powdered soup
 

Preparation / Directions:


Maybe you're enjoying a wonderful weather... In the part of the planet I'm living it's winter and cold. In the first case, this soup can be served cold. In the second case, a hot soup will do in the evening after a cold and rainy day. Clean and cut the leeks in small pieces, heat the olive oil and fry the leeks until golden. Add the water and the salt, and leave to boil during five minutes. Then add the potatoes cut into pieces and boil during 30 minutes. Then add the powdered soup and stir. Remove from fire and stir with electric mixer until the soup is liquid. Add a punch of nutmeg. Sprinkle parsley and serve i
