GARLIC BEAN SOUP

Ingredients:


2 cups vegetable broth

8 cloves garlic -- peeled

1 medium Onion -- chopped

4 cups white beans, cooked
 

Preparation / Directions:


Put broth, garlic, and onion in large bowl; cover. Microwave for 20 minutes or until vegetables are soft. Transfer to a blender or food processor, add half the beans and puree. Return soup to bowl. Add remaining beans and microwave 5 minutes or until beans are heated through. NOTES : Use large garlic cloves.
