CROCK-POT BEAN SOUP

Ingredients:


1 pound white beans (Great Northern)

1 medium smoked ham hock or 1 lb. smoked ham, diced

1 cup celery -- sliced

1 cup onion -- chopped

1 cup carrots -- chopped

2 medium bay leaves

16 ounces stewed tomatoes

10 3/4 ounces condensed tomato soup

1 teaspoon salt and pepper to taste
 

Preparation / Directions:


Soak beans overnight in 4 cups water. Combine all ingredients in crock pot. Add water to cover and mix well. Cover and cook on high setting 3 hours, turn to low setting and cook for 8 to 14 hours. Can be cooked entire time on high setting for 4 to 6 hours. Remove bay leaves when done.
