Cream Of Broccoli Soup 1

Ingredients:


20 ounces Frozen, Chopped Broccoli, Cooked And Drained

1/4 Cup Butter Or Margarine

2 Tablespoons Minced Onion

2 Stalks Celery, Minced

1/3 Cup All-Purpose Flour

4 Cups Chicken Broth

2 Cups Milk

1 teaspoon salt and Pepper
 

Preparation / Directions:


Assemble and attach fruit/vegetable strainer. Turn to speed 4 and strain broccoli. Set aside. Melt butter in a 5-quart pot over medium heat. Add onion and celery and saute until tender. Add flour and cook until a smooth paste. Add broth and cook until thickened, stirring occasionally. Stir in broccoli, milk, salt, and pepper. Heat through. Serve immediately.
