Chocolate Soup

Ingredients:


3 1/8 cups milk

1 1/8 cups double cream

2 7/8 cups dark chocolate -- chopped

1/8 pound caster sugar

8 large egg yolks

7/8 cup whipped cream -- whipped

6 tablespoons skinned hazelnuts -- toasted and chopped

1 medium finely grated rind of one orange

6 teaspoons grand marnier -- (or cointreau)
 

Preparation / Directions:


Bring the milk and double cream to the boil, add the chocolate, stir until melted. Set aside. Heat the sugar with one tablespoon of water to make a syrup. When the sugar has melted, bring it the boil and boil for one minute. Start to whisk the egg yolks and gradually add the syrup whilst whisking continuously. Once the sugar is incorporated, continue to whisk until the mixture is cold. It should double in volume. Fold in the whipped cream. Mix the egg mixture with the chocolate sauce. Distribute between small bowls. Sprinkle with hazelnut and orange zest and drizzle over the Grand Marnier sparingly. Chill well and serve with ice cream of your choice.
