Chilled Tomato Soup

Ingredients:


3 pounds ripe tomatoes

2 cups plain yogurt

2 cloves garlic

1 teaspoon celery salt

1/2 cup grated swiss cheese

1 tablespoons lemon -- juice of

1 teaspoon salt and black pepper

1/2 cup chicken broth

1 tablespoons fresh minced parsley
 

Preparation / Directions:


Puree tomatoes in processor until smooth. Add yogurt, garlic, celery salt, cheese, lemon juice, salt and pepper and chicken broth. Process until smooth and well blended. Chill until ready to serve. To serve, garnish with minced parsley. Approximately 8-10 minutes.
