Carrot Soup

Ingredients:


3 tablespoons butter

1 pound carrots -- peeled and diced

1 small onion -- chopped

1 medium potato -- peeled and diced

1/2 teaspoon salt

1/2 teaspoon sugar

1 teaspoon pepper -- ground, fresh

3 cups beef broth

1 tablespoon parsley -- chopped

1 teaspoon chervil -- chopped
 

Preparation / Directions:


1. Melt butter in a heavy saucepan. 2. Add carrots, onion, potato. 3. Add salt, pepper, sugar 4. Cover and cook over low heat for 15 minutes. Add broth and bring to a boil. 5. Lower heat and cover. Simmer for 15 minutes. 6. Puree in a blender 7. Serve hot with herbs on top.
