Cajun Bean Soup

Ingredients:


2 pounds red beans

1 pound ham

1 medium ham bone

4 cups onion

1 cup scallions

3 cups celery

1/4 cup parsley

3 tablespoons garlic

1 cup green bell pepper

1 teaspoon salt

1 teaspoon fresh ground black pepper

1/4 teaspoon cayenne

1/4 teaspoon red pepper flakes

1/4 teaspoon thyme

2 piece bay leaf
 

Preparation / Directions:


Combine beans and water to cover in a stockpot, over a high flame bring to a boil, boil for 2 minutes remove from heat allow to stand for 60-90 minutes, drain combine all ingredients in a stockpot add 1 gallon water bring to a boil, reduce heat, and simmer for 4 hours remove and discard ham bone serve hot
