Cafe Cartier's Cream of Tomato Soup

Ingredients:


2 teaspoons butter

1 cup onion -- finely chopped

8 ounces fresh mushroom -- sliced

2 teaspoons flour

15 ounces whole -- peeled tomatoes

1 cup hot water

17 ounces tomato sauce

2 pieces beef bouillon cubes -- dissolved in 1/4 cup

1/2 teaspoon white pepper

1 teaspoon sugar

1 pint heavy cream
 

Preparation / Directions:


Saute onions and mushrooms in butter 5 minutes or until onions become translucent. Add flour, mixing well. Cook until bubbly. Add hot water, tomato sauce, bouillon mix and pepper, stirring well after each addition. Cook until soup bubbles. Remove from heat, add sugar and cream, mixing well. Heat through, adjusting seasonings to taste.
