Avocado Soup

Ingredients:


1/4 Cup Butter Or Margarine

1/4 Cup Flour

4 Cups Milk

1 Large Very Ripe Avovado, Peeled And Pitted

1/2 Teaspoon Orange Peel

1/4 Teaspoon Ginger
 

Preparation / Directions:


Melt butter in large saucepan over medium heat. Blend in glour and cook until smooth. Gradually stir in milk, keeping mixture smooth. Continue cooking over medium heat utnil thickened, stirring constantly. Remove from heat and set aside. Place avocado in bowl. Attach bowl and wire whip. Turn to speed 6 and mash avocado, about 1 minute. Stop and scrape bowl. Add orange peel and ginger. Turn to speed 6 and whip 1 minute. Reduce to stir speed and slowly add milk mixture, whipping until smooth, about 2 minutes. Refrigerate until well chilled.
