Spicy Noodle Soup

Ingredients:

1 quart chicken broth
4 slices bacon
1 piece ginger root 1 inch piece
4 bunches scallions
3 cloves garlic
1 tablespoons sugar
1/4 teaspoon five-spice powder
1/4 pound mushrooms
1 head napa cabbage
2 tablespoons wine vinegar
2 tablespoons tamari sauce
1/4 pound cellophane noodles
1/4 teaspoon salt
1/8 teaspoon black pepper
 

Preparation / Directions:

Bring broth to boil. Dry bacon pieces in large heavy pan over high heat for 2 minutes. In small food processor, place ginger, scallion and garlic. Process to make a paste. Add to frying pan with bacon. Stir in sugar and five-spice powder. Stir-fry 1 minute Add mushrooms and cabbage to pan. Stir fry 1 minute Pour in boiling broth, vinegar and tamari sauce. Simmer a few minutes. Add noodles, salt and pepper. Simmer 2 minutes. Serve hot in soup bowls. Approximately 5-7 minutes.
