Squash Souffle

Ingredients:


1 pound butternut squash -- peeled/seeded/cubed

1/4 cup egg substitute

1/4 teaspoon ground cinnamon

1/8 teaspoon nutmeg -- grated

2 large egg whites

1/2 medium apple -- tart

1 tablespoons diet margarine -- melted

1 tablespoons maple syrup
 

Preparation / Directions:


Steam squash until very tender, approx. 10 minutes. Puree squash, egg substitute, cinnamon and nutmeg in food processor. In a large bowl, beat egg whites until stiff. Fold in squash mixture. Coat a 1 quart baking dish with nonstick spray. Spread squash in dish. Smooth top with a spatula. Peel and core the apple, then cut into slices. Arrange apple slices on top of squash. In a cup melt margarine and maple syrup, mix and pour over apples. Bake at 350 F. for 30 minutes or until golden and slightly puffed.
