Cold Pumpkin Souffle

Ingredients:


1 package unflavored gelatin

1/4 cup rum

4 large eggs

2/3 cup sugar

1 cup cooked pumpkin

1/2 teaspoon ground cinnamon

1/2 teaspoon ginger

1/4 teaspoon mace

1/4 teaspoon ground cloves

1 cup heavy cream -- whipped
 

Preparation / Directions:


1. Sprinkle gelatin over rum to soften; heat over hot water until gelatin is dissolved. 2. Beat eggs; gradually add sugar. Continue to beat until mixture is thick. 3. Stir in pumpkin seasoned with cinnamon, ginger, mace and cloves; mix in gelatin and fold in whipped cream. 4. Turn into a 1-quart souffle dish and chill until set.
