Cheese Souffle - Food Digest

Ingredients:


1 1/4 cups milk

1/4 cup margarine or butter -- melted

1/4 cup all-purpose flour

1/4 teaspoon salt

1 dash cayenne

6 ounces mild cheddar cheese -- cut in 1 inch cubes

4 large eggs -- separated

1/4 teaspoon cream of tartar
 

Preparation / Directions:


Heat oven to 350 degrees. Assemble Oster Kitchen Center blender. Put milk, margarine, flour, salt and cayenne into blender container. Cover; process at medium high until well blended. With motor running, gradually drop cheese cubes through feeder cap, processing until smooth. Remove to a small saucepan; cook, stirring, over medium heat until mixture thickens. Do not let boil. Assemble Oster Kitchen Center mixer with small bowl. Beat yolks at high until thick. Reduce speed to low; slowly add cheese mixture to yolks until mixed well. Set aside to cool slightly. In large bowl beat egg whites and cream of tartar at high until stiff peaks form. Slowly pour cheese mixture over, fold togehter. Pour mixture into greased 2 quart souffle dish. Bake in lower third of oven, 35 to 45 minutes or until puffed and golden. Serve immediately.
