Vidalia Onion Pie

Delicious side dish made from sweet Vidalia onions
 

Ingredients:


3 pounds Vadalia onions

1 cup rice

1/2 cup butter

1 cup Light cream

1 cup Swiss cheese (shredded)

1 teaspoon Sweet Hungarian Paprika

2 tablespoon chupped parsley
 

Preparation / Directions:


Boil the rice for five minutes. strain and let drain. Pre-heat oven to 325 degrees. Thinly slice the onions. In a large pot saute the onions in the butter over low heat till a golden color. but not browned. About 30 minutes. Add the rice, cream,parsley and cheese. Season with salt and pepper to taste. Mix well. turn into a buttered caserole dish. sprinkle the top with the paprika. Bake in a 325 degree oven for one hour till golden on top. Serve
