Fast And Fabulous Shrimp Tempura

Ingredients:


1 cup frozen pancake batter

1/4 cup beer

1 pound cooked shrimp

2 cups fresh mushroom halves

2 cups cauliflower florets

1 medium green or red pepper -- cut into strips

1 large sweet potato -- cut in thin strips

2 tablespoons oil

1/2 Cup soy sauce -- (optional)
 

Preparation / Directions:


1. Thaw pancake batter according to package directions. 2. Combine batter and beer; dip shrimp and vegetables in batter. 3. Fry in deep fat, heated to 375 F., until shrimp and vegetables are golden brown. 4. Drain on paper towels; serve at once with soy sauce, if desired.
