Spicy Boiled Shrimp

Ingredients:


10 pieces peppercorns

4 whole cloves

3 pieces bay leaves

1/2 teaspoon mustard seeds

1/2 teaspoon dried whole oregano

1/2 teaspoon dried whole basil

1/2 teaspoon crushed red pepper

1/8 teaspoon celery seeds

1 Dash dried whole thyme

1/2 teaspoon salt

1 medium lime -- halved

1 medium lemon -- halved

1 clove garlic -- crushed

3 pounds fresh large or jumbo shrimp -- unpeeled
 

Preparation / Directions:


Combine first 9 ingredients in a doubled cheesecloth bag; tie securely with string. Bring 2 1/2 qts. water to a boil in a large Dutch oven. Add salt, lime, lemon, garlic, and herb bag; return to a boil and cook 2 to 3 minutes. Add shrimp and return to a boil. Reduce heat and simmer, uncovered, 3 to 4 minutes. Drain well; rinse with cold water. Chill. Peel and devein shrimp, leaving tails on, if desired.
