Coconut-Gin Sherbet

Ingredients:


1/2 pound fresh coconut -- grated

2 1/8 cups water

1 1/4 cups sugar

1 tablespoon gin
 

Preparation / Directions:


Simmer the grated coconut in the water for 20 minutes. Add the sugar and simmer for 5 more minutes. Cool until at room temperature. Strain, add the gin and pour in the ice-cream maker. Freeze in the machine until stiff.
