Stuffed Artichokes

Ingredients:


4 medium artichokes

1/2 pound Swiss cheese -- grated

1/4 pound mozzarella cheese -- grated

1/2 cup celery -- chopped fine

1/2 cup onion -- chopped fine

1 pound crabmeat

4 ounces hot pepper cheese -- grated

1 teaspoon salt and pepper and red pepper

1/4 cup bell pepper -- chopped fine

1/2 cup bread crumbs

1 stick butter

2 large eggs -- well beaten
 

Preparation / Directions:


Wash artichokes and cut off tips. Boil until tender. Drain. Sauté celery, bell pepper and onions in butter. Remove from heat. Add crabmeat and grated cheeses. Add bread crumbs and eggs. Mix well. Clean out heart of artichokes and stuff with crab mixture. Stuff each leaf. Wrap in foil and bake at 375F for 35 minutes A.FR--Terrebonne Parish, Houma, La.
