Preparation / Directions:1. Brush 2 tablespoons melted butter on all sides of cod fillets; arrange in one layer in a baking dish; sprinkle with paprika.
2. Saute onion and garlic in remaining buffer until onion softens; add tomatoes, tarragon, white pepper and lemon juice; stir and simmer several minutes.
3. Pour sauce over fish; bake, uncovered, in preheated 350 F. oven 30 minutes, or until fish flakes easily.
4. Serve with hot cooked rice, if desired.
