Stuffed Lake Michigan Whitefish Bake

Ingredients:


4 pounds lake michigan whitefish -- dressed

1 cup mixed vegetables* -- cooked shredded

1 medium lemon -- juice of

1/4 cup corn oil

3 tablespoons bread crumbs

1 tablespoons fish eggs from fish -- (optional)

1 teaspoon salt -- to taste

1 teaspoon white pepper -- to taste
 

Preparation / Directions:


* carrots, celery, and onions 1. Have fish cleaned and boned, leaving skin intact; remove and discard all Insides other than fish eggs, which should be reserved for stuffing. 2. Combine vegetables, corn oil, bread crumbs, fish eggs, salt and white pepper in saucepan; saute until heated through, about 1 minute. 3 Stuff cavity; sew up open fish side with strong thread or use skewers to close opening. 4. Bake in preheated 350 F. oven 45 minutes. 5. Drizzle with fresh lemon juice and return fish to oven to cook 5 minutes longer.
