Royal Flounder Fillets

Ingredients:


1 pound flounder fillets

1/4 teaspoon salt

1/4 teaspoon pepper

1/4 cup mayonnaise or salad dressing

2 tablespoons chopped chives

1 tablespoon lemon juice

1 dash salt

1 large egg white

1/4 cup saltine cracker crumbs

1/4 teaspoon paprika
 

Preparation / Directions:


Sprinkle fillets evenly with 1/4 teaspoon salt and pepper, and arrange in a lightly greased 13 x 9 x 2 inch pan. Bake at 350 degrees for 10 minutes. Remove fillets with a slotted spatula, place on a heated ovenproof platter, and keep warm. Combine mayonnaise and next 3 ingredients. Beat egg white until set but not dry; fold into mayonnaise mixture, and spread over fillets. Combine cracker crumbs and paprika; sprinkle over mayonnaise mixture. Bake at 350 degrees for 10 minutes or until fish is opaque and flakes easily when tested with a fork.
