Mussels In Garlic Butter

Ingredients:


3/4 cup sweet butter -- softened

1/2 tablespoons lemon -- juice of

1 medium grated peel of 1 lemon

1/3 cup minced fresh parsley

4 cloves garlic -- crushed

3 tablespoons minced shallots

1 teaspoon white pepper

1 teaspoon nutmeg

4 dozen mussels -- well scrubbed and -- steamed and cooled
 

Preparation / Directions:


1. Combine butter with lemon juice, lemon peel, parsley, garlic and shallots; season to taste with pepper and nutmeg. 2. Combine butter-herb mixture in food processor fitted with steel blade; process until well blended. 3. Arrange mussels, in their shell halves, in shallow individual baking dishes; spread each mussel with some butter-herb mixture; run under hot broiler 2 to 3 minutes, watching carefully. If preferred, bake in preheated 425 F. oven 10 minutes, or until bubbly.
