Ingredients:

1 tablespoon honey

1/4 cup rice vinegar

2 tablespoons dry sherry or sake

1/4 cup vegetable oil

1/4 cup oriental sesame oil

1/4 cup soy sauce

3 cloves garlic -- minced

1 tablespoon finely minced fresh ginger

4 fillets desired number of fish steaks -- cut 1 to 1-1/4-inches thick

Preparation / Directions:

To make marinade, mix all ingredients but fish together in a small bowl. The marinade may be refrigerated for several weeks. To marinate, place fish in shallow glass dish or large, heavy zippered plastic bag. Pour enough marinade over to coat fish. Turn fish to coat both sides and marinate at room temperature for 30 minutes or covered in the refrigerator for 4 to 6 hours, turning once. Grill or broil fish 3 to 4 inches from coals or heating element for 3 to 5 minutes on each side. Prep Time: 15 minutes Cook Time: 30 minutes at room temp. Makes: Enough marinade for 8 steaks I like to keep a jar of this flavorful marinade in the refrigerator to use with any type of fish - - my favorites are tuna, swordfish and shark. After marinating, the fish can be grilled or broiled for a quick dinner or important party.
