Preparation / Directions:1. Make Oyster Cream: Melt butter in medium saucepan over low heat. Add shallot, garlic and ham; cook 6 to 8 minutes. Add oysters with their liquor and wine; cook until almost all liquid is evaporated. Add cream and curry powder; increase heat to medium. Bring to boil; boil until reduced to 1/2 cup. Whisk in cold butter, salt and pepper. Makes 1/2 cup.
2. Make mushrooms: Meanwhile, melt butter in medium skillet. Add shallots and garlic; cook 30 seconds. Add mushrooms and cook, stirring, until tender, 5 minutes. Season with salt and pepper. Keep warm.
3. Meanwhile, heat broiler. Rub filets with oil; sprinkle with salt and pepper. Broil 4 inches from heat source, 4 to 5 minutes per side for medium-rare.
4. Spoon 1/2 teaspoon Oyster Cream on each oyster and broil 1 minute. To serve, place filets on toast on 2 heated dinner plates. Arrange oysters around beef. Spoon 2 tablespoons Oyster Cream on each filet and top with ham. Spoon remaining sauce onto plates. Sprinkle with chives. Serve with steamed green beans and baby carrots.
