Easy Chioppino

Ingredients:


2 tablespoons pure olive oil

1 medium green bell pepper -- seeded, chopped

1 medium Onion -- thinly sliced

2 cloves garlic -- minced

2 teaspoons fennel seeds

2 cans stewed italian-style tomatoes -- (14 1/2 ounces each)

2 bottles clam juice -- (8-ounces each)

12 large uncooked shrimp -- peeled, deveined

1 pound sea bass fillets -- cut into 1-inch cubes

1 bunch chopped fresh italian parsley
 

Preparation / Directions:


Heat oil in heavy large saucepan over medium-high heat. Add bell pepper, onion, garlic and fennel seeds. Cover pan and cook until vegetables are tender, about 5 minutes. Add tomatoes and clam juice. Boil until mixture is slightly thickened, about 10 minutes. Add shrimp and fish and simmer until just cooked through, about 5 minutes. Season to taste with salt and pepper. Ladle cioppino into bowls. Sprinkle with parsley and serve. Prep Time: 10 minutes Cook Time: 20 minutes Makes: 4 servings Cioppino is a Mediterranean seafood stew. This quick version includes shrimp and fish, but you can also include mussels and clams if you like.
