Creamed Lobster On Toast

Ingredients:


1/4 cup butter

1 pound cooked lobster

2 tablespoons scallions

3 tablespoons flour

1/2 teaspoon salt

1/8 teaspoon cayenne

1/8 teaspoon freshly grated nutmeg

1 cup cream

24 slices buttered toast

2 tablespoons parsley
 

Preparation / Directions:


Heat butter in a saucepan, over a medium flame add lobster and scallions, heat and stir for 4-5 minutes add flour, salt, cayenne, and nutmeg-mix well heat and stir for 1 minute remove from heat, add cream, and stir until thickened spoon onto toast points garnish with minced parsley serve warm
