Mom's Chopped Herring

2 fillets schmaltz herrings -- filet and skin
1 medium apple -- peeled
1 medium onion
1 tablespoon graham cracker crumbs
2 large eggs -- hard-boiled
1/2 cup vinegar

Preparation / Directions:

Grate onion and apple on large holes of grater. Add herring, crumbs and whites of egg. Place in chopping bowl and chop fine. Mash egg yolks with vinegar and add to herring. Mixture will be wet.
