Creamy Apple Scones

Ingredients:


2 Cups chopped tart apples

6 tablespoons butter

1/2 Cup whipping cream

2 1/4 Cups all purpose flour

1/3 Cup sugar

1 tablespoons baking powder

1/4 Teaspoon salt

2 tablespoons coarse (crystal) sugar
 

Preparation / Directions:


Melt 2 tablespoons of butter in a frying pan. Add the apples and cook over medium high heat, stirring frequently until tender and water from apples is almost evaporated. Remove from heat and set aside. In mixing bowl, mix flour, sugar, baking powder, and salt. Cut in remaining 4 tablespoons of butter (may be done by hand or in a food processor) until mixture resembles coarse crumbs. Add whipping cream and apples and mix by hand until mixture forms a ball. Remove to a floured surface and knead six times. Pat dough out onto a circle roughly 8-10 inches in diameter. Sprinkle with the coarse sugar and cut into 12 pie-shaped wedges, separating each wedge slightly. Bake in a 400 degree oven for 20-25 minutes until golden brown. Serve warm with a pat of butter.
