Corncakes 'n Sausage

Ingredients:


3 large eggs

1 cup milk

1 1/4 cups flour -- plain

1 tablespoon baking powder

1 tablespoon sugar

1/2 teaspoon salt

2 tablespoons oil

17 ounce whole kernel corn -- frozen, drained

1 spray pam

24 ounces sausage links -- precooked

1 cup fresh blueberries

1 cup syrup

1 bunch butter
 

Preparation / Directions:


Beat eggs with electric mixer until light and fluffy; add milk. Set aside. Combine flour, baking powder, sugar, and salt in a medium bowl; mix well. Add dry ingredients and oil to reserved egg mixture. Beat until batter is smooth. Stir in corn. Pour into two 8" round cakepans coated with cooking spray. Arrange sausage links and blueberries on top of batter, spoke fashion. Bake at 450 for 20-25 minutes. Let stand 10 minutes. Cut into wedges and serve with syrup and butter.
