Roasted Red Pepper Sauce

Ingredients:


7 ounces red pepper roasted

2 clove garlic

1/2 small onion chopped

1 tablespoons olive oil

1 tablespoons balsamic vinegar

1 Teaspoon parsley

1 Teaspoon basil

1 Teaspoon Old Bay seasoning

1 tablespoons heavy cream

1 Teaspoon butter

1 medium zucchini (optional)
 

Preparation / Directions:


Process red peppers with juice and garlic in food processor. In oil, sauce onions and zucchini. Add spices. Add vinegar and cook 1 minute til liquid absorbed. Add pepper puree and stir. Add 1 t butter and stir til melted. Add heavy cream and stir. Can serve over fish or chicken. (9.5 carbs ea.)
