Lime Butter Sauce

Ingredients:


2 large egg yolk

1 teaspoon fresh lime juice

1/2 cup unsalted butter

1/2 teaspoon lime zest
 

Preparation / Directions:


whisk together yolks and lime juice add half the butter heat and whisk, over very low heat, until melted add remaining butter, heat and whisk vigorously, until thickened stir in lime zest remove from heat serve hot or at room temperature cover and chill any remainder
