Cherry-Sauced Quail

Ingredients:


4 whole dressed quail -- skin on

3 tablespoons butter or margarine

---SAUCE---

1/3 cup dried sweetend cherries -- halved

1/3 cup port wine

3 tablespoons cherry preserves

1/2 teaspoon grated lemon peel
 

Preparation / Directions:


Heat oven to 400 degrees. Sprinkle surface and cavities of qual with salt and pepper. In a 12-inch nonstick skillet, melt butter over medium-high heat. Add quail. Cook quail five to six minutes, or until browned on all sides. Turn quail frequently. Arrange quail breast-side up in an 8-inch square baking dish. Cover with foil. Bake 20 to 25 minutes, or until meat is tender and juices run clear. Meanwhile, in a 1-quart saucepan, combine sauce ingredeints. Bring to a boil over medium heat. Boil on minute stirring frequently. Serve sauce with quail.
