Hot Chicken And Mozzarella Sandwiches

4 pieces boneless -- skinless chicken breasts -- (about 1 pound)
2 tablespoons olive oil or vegetable coating spray
1/2 pound mozzarella cheese -- thinly sliced or shredded
4 piece onion rolls

Preparation / Directions:

Place oven rack about 4-inches from broiler unit. Preheat oven to broil. Place chicken breasts between 2 sheets of plastic wrap or wax paper and pound to 1/4-inch thickness. Sprinkle with salt and pepper. Place rolls, cut-side up, on a broiler pan or baking sheet Divide mozzarella over rolls. In a large skillet, preferably non-stick, heat 2 tablespoons olive oil or coat with cooking spray. Saute chicken over moderately high heat until golden brown on each side, 2 to 3 minutes per side, until cooked through. Remove from heat. Broil rolls with cheese until cheese melts and begins to brown, 1 to 2 minutes. Place chicken on cheese, top with rolls and serve. Faster: Place cooked chicken and mozzarella on rolls. Wrap in paper towel and microwave at 100% power (high) for 45 to 60 seconds or until cheese melts. Prep Time: 5 minutes Cook Time: 4 to 6 minutes Makes: 4 servings
