Salsa Fresca Con Chipotle

Ingredients:


1/2 medium Red onion, diced

3 Cup Fresh tomatoes, diced

2 Tablespoon Chopped cilantro

4 medium Chipotle peppers, Hydrated and minced

1 teaspoon Salt

1 teaspoon Sugar

1 medium Juice of one lime
 

Preparation / Directions:


Remove seeds and stems from chipotles. Hydrate the dried chipotles by placing them in enough water to cover. Bring them to a boil, turn off the heat and let them sit until they cool. After mincing them finely, add all the ingredients together. Let the salsa sit for at least a half-hour before serving.
