Mango-Pear Salsa

Ingredients:


1 medium mango -- peeled and diced

1 medium pear -- firm but ripe, -- diced

1/2 medium yellow bell pepper -- diced

1/2 medium red bell pepper -- diced

1/2 medium poblano pepper or 1 serrano chile -- seeded and chopped

1/2 cup cilantro -- chopped

2 tablespoons fresh lime juice

1 clove garlic

1 teaspoon salt and pepper -- to taste
 

Preparation / Directions:


Combine all the ingredients, mix thoroughly, and set aside in the refrigerator for at least 2 hours. Use within 24 hours. Makes 3 cups. Notes: This salsa goes nicely with spicy meat dishes. Fully ripe Bosc pears are the best choice for this salsa; they are not only sweet, they have a bouquet that others do not have. Papaya may be substituted for the mango.
