Ingredients:


1 medium jalapeno chile pepper -- finely chopped

1 medium lime -- juiced

2 tablespoons cider vinegar

1/4 cup fresh cilantro -- chopped

3 cups fruit (such as honeydew, melon, pineapple, watermelon -- mango, cantaloupe, tomatoes, OR other fruit -- diced)
 

Preparation / Directions:


Combine all ingredients in a small bowl and set aside for 30 minutes at room temperature or for a few hours in the refrigerator to allow flavors to blend before serving. Makes 3 cups.
