Papaya-Pineapple Salsa

Ingredients:


3/4 cup ripe papaya -- diced

3/4 cup fresh pineapple -- diced

1/2 cup diced jicama

3 tablespoons chopped red onion

1 medium chili pepper OR serrano, seeded and minced

1 clove garlic -- minced

2 teaspoons lime zest

2 tablespoons fresh lime juice

1 tablespoon minced cilantro
 

Preparation / Directions:


Combine papaya, pineapple, jicama, red onion, chili pepper, garlic, lime zest, lime juice and cilantro. cover and refrigerate until ready to serve. For best flavor and texture, do not make more than 2 hours before serving.
