Smoked Salmon Spread - Low Fat

Ingredients:


12 ounces smoked salmon

1 cup nonfat cream cheese -- at room temp

2 teaspoons prepared horseradish -- up to 3

2 tablespoons onion -- finely chopped

1 teaspoon lemon juice

1/2 cup fresh parsley -- minced
 

Preparation / Directions:


1. Place the salmon in a medium sized bowl and separate it into flakes. Add the remaining ingredients except for parsley and stir until the mixture is the consistency of a spread. 2. Shape the salmon mixture into a log, Spread the parsley out on waxed paper and roll the log in the parsley to coat well. Transfer to a serving platter, cover and refrigerate for several hours. 3. Serve with whole grain crackers and sticks.
