Salmon Patties With Creamed Pea Sauce

Ingredients:


---salmon cakes

16 ounces salmon -- drained,flaked -- (reserve 1/4 cup liquid)

1 cup mashed potato flakes

1/4 cup grated onion

2 teaspoons lemon juice

1/4 teaspoon pepper

2 large eggs

---creamed pea sauce

2 tablespoons margarine

2 tablespoons flour

1/2 teaspoon dill weed

1/4 teaspoon hot mrs. dash

3/4 cup skim milk

1/4 cup reserved salmon liquid

1 package frozen green peas -- (8 ounce)

1 package frozen snow peas -- (8 ounce)
 

Preparation / Directions:


Salmom Patties Mix all ingredients together. Press firmly into greased muffin cups. Bake 350 degrees 30 to 35 minutes. Creamed Pea Sauce Defrost peas in microwave and cook just until crisp (about 1 minute). In saucepan or skillet, melt margarine. Stir in flour, dill weed, salt, pepper and Mrs. Dash. Gradually add milk and reserved salmon liquid, stirring with whisk to make a creamy sauce. Cook over medium heat stirring constantly until mixture gently boils and thickens. Stir in peas and heat until peas are hot. Place Salmon Patties on plate and spoon Creamed Pea Sauce over each. VARIATION: Make into patties like hamburgers. Fry in skillet in a little oil, about 7 minutes on each side, until golden brown on each side. This sauce adds a delightful flavor and makes the salmon patties moist and tasty.
