Pecan-Topped Baked Salmon Fillets

Ingredients:


2 tablespoons butter -- room temperature

3/4 cup finely chopped pecans

1 teaspoon dried thyme

4 fillets salmon filets -- (6 ounces each)

6 slices lemon wedges
 

Preparation / Directions:


Preheat oven to 400 degrees. Combine butter, pecans and thyme in small bowl. Arrange salmon fillets on baking sheet. Sprinkle lightly with salt and pepper. Divide pecan mixture over fillets, covering top completely, and pressing lightly to adhere. Bake until fish is just cooked through, about 15 minutes. Serve with lemon wedges. This dish is quite rich with the addition of pecans atop the salmon. I like to serve it with steamed asparagus and rice pilaf.
