Orange Basil Salmon With Mixed Green Salad

Ingredients:

1 1/2 pounds salmon fillets -- skinned
1/2 cup orange basil dressing/marinade
4 teaspoons honey
1 medium orange -- cut into 8 wedges
4 cups mixed fresh salad greens
 

Preparation / Directions:

Place oven rack in top position. Preheat oven to broil. In a small bowl, stir together Orange Basil Dressing and honey. Line broiler pan with heavy foil and spray or grease the foil. Place salmon fillets on pan. Brush tops with enough dressing to coat thickly. Broil approximately 2-inches from heat for 5 minutes or until cooked through. The tops will be charred. Place greens in salad bowl and toss with remaining orange-basil mixture. Divide salad and salmon among 4 plates. Squeeze 1 orange wedge over each fillet and garnish with remaining wedges. Prep Time: 5 minutes Cook Time: 5 minutes Makes: 4 servings
