Panzanella - Bread Salad

Ingredients:


1 loaf loaf french bread -- day old

2 medium ripe tomatoes -- diced

1 medium white onions -- peel, slice

1 medium cucumbers -- peel, seed, slice

1/8 cup parsley -- chopped

2 tablespoons capers -- drained

1/4 cup fresh basil -- chopped

---DRESSING---

2 tablespoons olive oil

1 tablespoon balsamic vinegar

2 tablespoons lemon juice

1 clove garlic -- crushed

1 teaspoon salt and pepper -- to taste

1/8 cup parmesan cheese -- grated
 

Preparation / Directions:


Combine all dressing ingredients in a large bowl. Whisk until smooth. Add remaining ingredients and toss well. Allow to stand at room temperature for about 30 minutes. Toss again and serve.
