Orange, Romaine Lettuce And Blue Cheese Salad

1/3 cup extra virgin olive oil
1/4 cup orange juice
3 tablespoons white wine vinegar
1 head romaine lettuce -- cut into bite-size
1/2 small red onion -- thinly sliced
2 large oranges -- peeled, white pith removed -- thinly sliced
1/2 cup crumbled blue cheese

Preparation / Directions:

Whisk oil, orange juice and vinegar in large bowl to blend. Season to taste with salt and pepper. Combine lettuce and onion in large bowl. Toss with dressing. Transfer salad to platter. Arrange oranges over. Sprinkle with blue cheese and serve. Prep Time: 15 minutes Makes: 6 servings Oranges and blue cheese are a dynamite combination in a salad. The orange flavor is intensified by adding orange juice to the dressing.
