Cool As A Cucumber Salad

Ingredients:


1 cup rice

1 cup cucumber seeded -- finely chopped

3/4 cup plain unflavored yogurt or sour cream

2 tablespoons onion -- finely chopped

1 tablespoon balsamic vinegar

2 tablespoons dill weed

1 teaspoon salt

1/4 teaspoon ground black pepper
 

Preparation / Directions:


Cook rice. Rinse and cool. In a large bowl, combine rice with all remaining ingredients; mix well. Cover and refrigerate until well chilled to allow flavors to blend, approximately four hours.
