1 small red onion -- halved ond thinly sliced
1 medium orange -- seperated into segments, with 2
1 tablespoon juice reserved
2 medium grapefruits -- preferably pink -- separated into segments
1/2 medium ripe papaya about 8oz) coarsely sliced
1 medium sweet red bell pepper -- cored, seeded and thinly sliced
1 medium sweet yellow bell pepper -- cored, seeded ond thinly sliced
1/2 cup sugar
1 1/2 teaspoons salt
1/4 teaspoon French mustard
3 tablespoons white vinegor
1/2 cup vegetable oil
2 tablespoons papaya seeds

Preparation / Directions:

Place the onion in a small bowl. Cover with ice water and leave to stand for 30 minutes at room temperature. Drain and dry on paper towels.
