Artichoke Salad 3

Ingredients:


28 ounces artichoke hearts -- drained and halved

2 cups thinly sliced mushrooms

1 1/2 cups snow peas -- trimmed

8 large lettuce leaves

1 Cup sliced blanched almonds -- (optional)

---DRESSING---

1/4 cup red wine vinegar

1/4 cup vegetable oil

2 teaspoons dijon mustard

1 teaspoon minced garlic

1 teaspoon dried dill weed

1 teaspoon salt and freshly ground black pepper -- to taste

1 cup heavy cream
 

Preparation / Directions:


In medium non-metal bowl, combine artichoke hearts, mushrooms and snow peas. In separate bowl, combine all dressing ingredients except cream; mix well. Slowly add cream, whisking until well combined. Pour dressing over vegetables and toss well. Serve on lettuce leaves. Sprinkle with almonds if desired
